Butternut Squash with Sage and Angelico’s Balsamic Dressing

2 Tbsp (30 ml) olive oil
1 red onion, thinly sliced
2 cloves garlic, finely chopped
1 ½ lb (750 g) peeled, seeded and cubed butternut squash (or 1 medium squash)
2 Tbsp (15 ml) maple syrup
½ cup (125 ml) chicken broth
2 Tbsp (30 ml) finely chopped fresh sage, divided
½ tsp (2 ml) freshly grated nutmeg
½ cup (125 ml) Angelico’s Balsamic Dressing
salt and pepper to taste
Methods/steps
- Heat the oil in a large non-stick skillet over high heat, adding the onion, garlic and squash. Stir to combine, and reduce heat to medium. Stir occasionally and cook until the onions are softened, or for about 5 minutes.
- Blend in maple syrup, chicken broth, half the sage and nutmeg. Cover and reduce heat to low, stirring occasionally, and simmer until the squash is tender, or for about 8-10 minutes. Remove from heat and stir in Angelico’s Balsamic Dressing together with remaining sage, salt and pepper before serving.
