Savoury Onion Scones

Simple to prepare, these scones are a perfect accompaniment to our fluffy Scrambled Eggs baked in Prosciutto Cups.

• 1 Ontario yellow onion, finely chopped
• 1 tbsp (15 mL) butter
• 2 cups (500 mL) biscuit mix
• 1/2 cup (125 mL) shredded Ontario Old Cheddar Cheese
• 1/2 tsp (2.5 mL) freshly ground coarse black pepper
• 1/2 cup (125 mL) milk

Methods/steps

1. Preheat oven to 230°C (450°F). In a medium microwave-safe bowl, combine onion and butter; microwave on high (100%) power for 2 to 3 minutes or until onion is softened.

2. Stir in biscuit mix, cheese and pepper. Stir in just enough milk to make soft dough. Knead on lightly floured surface several times.

3. Pat or roll dough into a 1/2-inch (1 cm) thick circle, about 9 in (23 cm) in diameter. Cut into 8 wedges and place onto a non-stick baking sheet. Bake for 10 to 12 minutes or until golden. Best served warm.

Variation: Spicy Onion Scones with Herbs:

Add 2 tbsp of finely chopped fresh herbs (like parsley or rosemary, or a combination), and 1/2 tsp (2.5ml) crushed dried chili flakes when blending in the dry ingredients.
